Dark Chocolate Peanut Butter Rocky Road Slice
Our Dark Chocolate peanut butter is our favourite way to get in our daily intake of both peanut butter and chocolate in one swoop. This Rocky Road recipe is easy to make and perfect to use up any leftover nuts, seeds and fruit you might have in your pantry!
What you’ll need:
-
250g melted dark chocolate
-
1/2 cup goji berries
-
1/2 cup coconut chips
-
1/2 cup puffed rice, we used Blue Frog’s coco munch cereal
-
1/2 cup pistachio nuts
-
1/2 cup freeze-dried raspberries
Method:
-
Line a baking tin or dish with baking paper (we used a 20 x 20cm tin).
-
Melt your dark chocolate either in a double boiler or a microwave (if using a microwave, make sure to do it in 30 - 40 second increments and stir in between to avoid burning).
-
Mix in the F&F Dark Chocolate peanut butter followed by the remaining ingredients until everything is well coated and combined.
-
Pour into prepared baking tin and spread out to your desired thickness.
-
Set in the fridge for at least an hour, then slice and enjoy!
This recipe would also work amazingly well with our Chocolate Almond Butter to add even more crunch. You can also switch it up and add any other dried fruits or nuts you have in your pantry!
